Ingredients:

1 pound hamburger

1 onion, chopped

1 green pepper, chopped

2 tablespoons sugar

1 tablespoon mustard

1 tablespoon vinegar

1 teaspoon salt

¾ cup catsup

And a few bread crumbs

What to do:

Brown hamburger and drain off fat. Add remaining ingredients and simmer for about an hour. Serve on hamburger buns.

 

Sloppy Joes

This is a no-recipe recipe, a recipe without an ingredients list or steps. It invites you to improvise in the kitchen.

Put a Dutch oven over medium-high heat on your stove, then add a glug of olive oil and sauté in it a handful of chopped onions, a couple diced ribs of celery, a diced jalapeño and a small diced red pepper. When the mixture is supersoft, add a few cloves of minced garlic and cook for a couple more minutes, then dump a pound and a half of ground beef into the pot — ideally the sort that is 20 percent fat — and stir and sizzle until it is well browned, about 10 minutes. Bring the heat down a bit and add a lot of tomato paste — say 3 tablespoons, maybe 4 — and let it get a little toasty before adding a cup or more of puréed canned tomatoes. Cook that down for a few minutes, then add quite a few glugs of Worcestershire sauce and hot sauce to taste, and continue cooking until the mixture is quite thick, another 15 or 20 minutes. Season to taste and serve on toasted potato buns. I like steamed broccoli on the side, a walk for the dog and bed.

Ingredients:

3 tablespoons vegetable oil

1 onion, chopped

1 stalk celery, chopped

1 cup chopped mushrooms

1 pound medium ground beef or ground turkey

¼ beef broth

¼ cup ketchup

½ teaspoon hot pepper sauce (or more, or less, or none)

What to do:

Heat the oil in a large skillet. Add the onion, celery, and mushrooms and cook over medium heat until soft, 7 to 10 minutes.

Add the ground beef or turkey and cook, stirring to break up the lumps, until the meat is no longer pink, about 5 to 7 minutes.

Add the beef broth, the ketchup and the hot pepper sauce and simmer for another 5 minutes, until everything is nicely glopped together.

Spoon over 4 toasted hamburger buns and eat, sloppily.

 

NOTE: Ketchup, also known as catsup, ketsup, red sauce and tomato sauce

Additional ingredients found in other recipes: garlic, brown sugar, chili powder, red pepper flakes.
